<u>തയ്യാറാക്കുന്ന വിധം</u><br />

ആദ്യം ഒരു പാത്രത്തില് അമ്പത് ഗ്രാം നെയ്യ് ഒഴിച്ച് ചൂടാക്കി അതില് ചെറുതായി അരിഞ്ഞ വലിയ ഉള്ളി നന്നായി വഴറ്റുക. നല്ല ബ്രൌണ് കഴറാകുമ്പോള് കോരിയെടുക്കാം.<br />
<br />
ഇതിനെ ബിസ്ത എന്നാണ് തലശ്ശേരിക്കാറ് പറയുന്നത്. ഈ ബിസ്തയാണ് ഇറച്ചിയിലേയ്ക്കും , ബിരിയാണി ഉണ്ടാക്കുമ്പോഴും ഉപയോഗിക്കുന്നത്. ഇനി ഇറച്ചിക്കു വേണ്ട<br />
<br />
മസാല തയ്യാറാക്കാം. മുളക് പൊടിയോ, മഞ്ഞള് പൊടിയോ ഒന്നും ചേറ്ക്കാതെയാണ് ഇവിടെ മസാല ഉണ്ടാക്കുന്നത്. ഒരു പാത്രം അടുപ്പത്ത് വയ്ക്കുക. അതിലേയ്ക്ക് അരിഞ്ഞ്<br />
<br />
വച്ചിരിക്കുന്ന തക്കാളി ഇട്ട് നന്നായി വഴറ്റുക. എണ്ണയോ, നെയ്യോ ഉപയോഗിക്കേണ്ടതില്ല. തക്കാളി നന്നായി വാടി വരുമ്പോള് അതിലേയ്ക്ക് പച്ചമുളകും, ഇഞ്ചിയും,<br />
<br />
വെളുത്തുള്ളിയും ചതച്ചത് ഇട്ട് നന്നായി ഇളക്കുക. ഇത് മൂത്ത് വരുമ്പോള് അതിലേയ്ക്ക് ഇറച്ചി കഷ്ണങ്ങള് ഇടാം. ഇറച്ചി വേവുന്നതിനാവശ്യമായ വെള്ളവും ഒഴിക്കണം.<br />
<br />
ആവശ്യത്തിന് ഉപ്പും, പൊതീനയിലയും ഇട്ട് അടച്ച് വെച്ച് വേവിക്കുക. ഇറച്ചിയിലെ വെള്ളം വറ്റിപ്പോകാതെ നോക്കണം. വേവുന്നതു വരെ വെള്ളം ഒഴിക്കണം. കോഴി വെന്ത്<br />
<br />
കഴിഞ്ഞാല് അതിലേയ്ക്ക് നേരത്തെ തയ്യാറാക്കി വച്ചിരിക്കുന്ന ഉള്ളി വഴറ്റിയത്(ബിസ്ത) ഇടുക. എന്നിട്ട് കുറച്ച് നേരം കൂടി അടച്ച് വയ്ക്കുക. അതിനു ശേഷം ഒരു സ്പൂണ്<br />
<br />
ഗരം മസാല, നാരങ്ങാ നീര് , ഒരു പിടി മല്ലിയില എന്നിവ ഇടുക. മല്ലിയില വാടുമ്പോള് ഇറച്ചി അടുപ്പില് നിന്നും വാങ്ങി വയ്ക്കുക. ബിരിയാണിക്കുള്ള അരി വേവിക്കുക<br />
<br />
എന്നതാണ് അടുത്ത ജോലി. ഒന്നര കിലോ അരിക്ക് രണ്ട് ലിറ്ററ് വെള്ളം എന്ന കണക്കില് ഒരു പാത്രത്തിലെടുത്ത് തീയില് വയ്ക്കുക. ചൂടാകുമ്പോള് അതിലേയ്ക്ക് ഒരു സ്പൂണ്<br />
<br />
കറുവപ്പട്ട, ഗ്രാമ്പൂ, ഏലയ്ക്കാ എന്നിവ ഇടുക. വെള്ളം നന്നായി തിളയ്ക്കുമ്പോള് അതിലേയ്ക്ക് നൂറ് ഗ്രാം നെയ്യ് ഒഴിക്കുക. പാകത്തിന് ഉപ്പും ചേറ്ക്കുക. അരി നന്നായി<br />
<br />
കഴുകി വെള്ളത്തിലിടുക. രണ്ട് സ്പൂണ് റോസ് വാട്ടറ് കൂടി ചേറ്ത്ത് അടച്ച് വെച്ച് വേവിക്കുക. വെള്ളം വറ്റി കഴിഞ്ഞാല് പിന്നെ കുറച്ച് നേരം ആവിയില് വേവിക്കണം.<br />
<br />
ഏകദേശം എണ്പത് ശതമാനം വെന്ത് കഴിഞ്ഞാല് അത് തീയില് നിന്നും മാറ്റി വയ്ക്കുക. ഇനി തയ്യാറാക്കി വച്ചിരിക്കുന്ന ഇറച്ചി അടുപ്പില് വയ്ക്കുക. ഇറച്ചിക്കു മുകളിലായി<br />
<br />
അല്പം ഉള്ളി വഴറ്റിയതും, മല്ലിയിലയും ഇടുക. അതിന് മുകളിലായി വെന്ത അരി ഇട്ട് ഒന്ന് തട്ടി നിരത്തിയിടുക. അതിലേയ്ക്ക് പാലില് കലക്കി വച്ചിരിക്കുന്ന കുങ്കുമപ്പൂ<br />
<br />
തളിക്കുക. ബിരിയാണിക്ക് കളറ് വരാനാണ് ഇങ്ങനെ ചെയ്യുന്നത്. ഈ ബിരിയാണി കഴിച്ചാല് നമുക്കും നല്ല കളറ് കിട്ടുമെന്നാണ് വെപ്പ്. അണ്ടിപ്പരിപ്പും മുന്തിരിയും വറുക്കാതെ<br />
<br />
അതിന് മുകളില് നിരത്തുക. അതിന് മുകളിലായി ബാക്കിയുള്ള ബിസ്ത കൂടി ഇടുക. ഇനി ദം ആക്കുക കൂടി ചെയ്താല് തലശ്ശേരി ബിരിയാണി റെഡി. ഒരു കോറ തുണി<br />

നന്നായി നനച്ച് ആവി പോകാതെ പാത്രത്തിന് ചുറ്റും കെട്ടി വയ്ക്കുക. പാത്രത്തിന് മുകളില് വെയിറ്റിനായി ഭാരമുള്ള എന്തെങ്കിലും എടുത്ത് വയ്ക്കുക. പത്ത് മിനിറ്റ്<br />
