Hot and sour soup
Ingredients
- Oil – 1 tablespoon
- Onion – 1 small, finely chopped
- Ginger – 1 inch piece, finely chopped
- Garlic – 3 cloves, finely chopped
- Celery – 2 inch piece
- French beans – 4
- Button Mushrooms – 4
- Carrot – ½ medium
- Cabbage – ½ cup chopped roughly
- Soy sauce – 3 tablespoons
- Green chili sauce – 3 tablespoons
- Vegetable stock – 5 cups
- Corn flour – 3 tablespoons
- Salt – to taste
- Black papper poweder – ½ teaspoon or to taste
- Sugar – ½ teaspoon
- White vinegar – ½ teaspoon
- Green pepper – ¼ small, finely chopped
- Spring onion (greens only) – cut at diagonal for garnishing
Instructions
- Food process celery, french beans, button mushrooms, carrot and cabbage until finely chopped.
- Heat the oil in a pot.
- Add onions, ginger and garlic. Saute till translucent.
- Add celery, french beans, button mushrooms, carrot and cabbage. Saute for 3 minutes.
- Add soy sauce and green chili sauce, mix well.
- Add 4 ½ cups of vegetable stock.
- Add sugar, salt and black pepper powder.
- Add cornflour to ½ cup of vegetable stock, mix and add it to soup.
- Add green pepper, vinegar. Let it boil for 2 minutes.
- Garnish it with green onions and serve hot.
